Muleteers who carried salted fish inland from Galicia built Castrillo de los Polvazares, and their stone houses still have the wide gateways and inner courtyards that carts and animals needed. The village was rebuilt on its present site in the 16th century after floods, and its streets remain cobbled rather than asphalted. Most visitors come for cocido maragato, served in restored muleteers' houses.
